Baked Garlic Cheese Grits
Now in between all the fun I am having, I do take time to cook. One day my friend Terri and I got talking about cheese and bacon grits. That led me to want to make a casserole that I could have for breakfast. I found this Paula Deen recipe on the internet and tweaked it just a tad to fit my wants.
First off I took bacon. I chopped it up and cooked it so I could add it to the grits.
I got the cheddar cheese ready. The original recipe said to cube the cheese. The 2nd time I made it I grated the cheese so it would melt better.
For cooking the grits you needed chicken broth and garlic powder.Once this is boiling, you add the grits.
Once the grits are thick and creamy you add in the cheese and some milk. Then add beaten eggs and butter.
The last thing I add is the bacon, yum, yum, yum.
The cooked grits go into a greased baking dish, and are topped with grated white cheddar cheese.
The finished product. This was super yummy.
Baked Garlic Cheese Grits
6 cups chicken broth - use low sodium if you are adding the bacon otherwise it will be salty
1/4 tsp garlic powder - I used granulated garlic
2 cups regular grits - not quick cooking
16 ozs cheddar cheese, grated
1/2 cup milk
4 large eggs, beaten
1/2 cup ( a whole stick) butter
8 ozs white cheddar cheese, grated
1/2 pound bacon, chopped and cooked
Preheat the oven to 350 degrees. Grease a 4-qt. baking dish. Bring the broth and garlic powder to a boil. Stir in the grits and whisk until completely combined. Reduce the heat to low and simmer until the grits are thick, about 8-10 minutes. Add the cubed cheddar cheese and milk, stir until the cheese is melted. Gradually stir in the eggs and butter, stirring until well combined. Pour the mixture into the prepared casserole and sprinkle with the white cheddar cheese. Bake for 35-40 minuted or until set.
A full recipe makes 12 servings. I made 1/2 of the recipe for 6 servings.
